Chickpea Crepes

Ingredients:

  • Oil for Pan
  • 1/3Cup finely ground chickpea flour
  • 1/3Cup + 1Tbsp. Water
  • 1/4tsp. salt

Directions:

  • Heat skillet over medium heat.
  • Whisk together flour, water, & salt. Add the water slowly while whisking to avoid clumping. (if you get clumps, let the batter sit for 10 minutes, then continue whisking)
  • Coat pan with oil. Then pour in the batter. Swirl around in the pan to create an even layer.
  • Cook 3-4 minutes. Use spatula to check for browning on underside. When the top is cooked thru add any filling if you’d like & fold or roll.
  • Enjoy!
